I tear up the Carpicco, Add some Balsamic Vinegar to it some times. Most of the all inlcusive resorts I go to in Cancun have it on the menu.

The tartare looks mouthwatering

Nothing raw bothers me, I made ceviche with crappie and white bass right out of lake Tawakoni topped with fresh roe from the crappie.

Have never tried it - but looks like I need to add to my bucket list!

Love me some tuna or salmon sashimi/sushi, and cook my steaks & venison backstrap rare anyways - so should be good to go!

Absolutely! Got an impala in SA last year and made backstrap Carpaccio that night with it. It was outstanding.
