I have to try this. Too bloody hot to be running the oven in the house anyway. I don't have a mesh pizza pan, but wonder if my pizza stone, preheated would work. Obviously won't get a lot of smoke penetration from below.

Yeast, sugar, water, white wine, baker's flower, salt, pepper, rosemary and fennel.

This worked out great on the Traeger on high -- about 450. I let the stone soak in the heat for a half hour before sliding the pizza on. Fifteen-20 minutes later, chow time!
I used this dough recipe and it was great; also added the optional TSP garlic powder and TSP Italian seasoning to the flour for more flavor.
