I did bbq comps years ago. I had fun because I liked the guys I was cooking with. Was a lot of work and got sort of expensive. We had kids and I quit doing it.

Well then don’t be talking chit about pellet smokers just because you like to do it the old way if it’s “cheating”. It’s the way of the future no need in baby sitting a stick burner for 12 hours anymore. I'll talk chit about pellet smokers all I want, but you are missing my point. In BBQ competitions, do pellet smokers really compete against real smokers? Stick smokers always say that pellet smokers don’t give a good smoke flavor. So if we are at a BBQ comp anything should be allowed and judged blind madly based on the meat presented, no matter what it was cooked on. I’ve absolutely nailed briskets on a stick burner and absolutely ruined briskets on a pellet smoker. One may use an app, but it still takes a little luck and know how. If you’re a stick burner purist, then no Wi-Fi for r other meat thermometers are allowed, you know, cook it like a purist, go be feel only. Pellets are allowed in most competitions, his favorite bbq restaurant uses automated smokers, not pit You are getting trolled and arguing BBQ with an import from Hawaii. At this point he isn’t even using hooks, and still getting hook ups

You are getting trolled and arguing BBQ with an import from Hawaii. I been a Texan 55 years, more than most of the weedhoppers on here.  Seriously, I might get a pellet smoker one day, but I won’t admit it on here, kinda like pedicures.

These came off my pellet smoker. They had plenty of smoke for me and tasted great. I have my stick burner and use it for pork butts (pulled pork) and a brisket every now and then. I never cook butts on the pellet smoker, because it doesn`t give it near enough smoke for me. Briskets turn out OK on the pellet smoker, but I still use my offset smoker if I have time. They both turn out great brisket. Any pellet smoker cannot compete with the smoke flavor that you will get from a big offset smoker that a BBQ place will use. My backyard offset smoker cannot either. They just put out different smoke than the smaller ones. Seasoned 1 hour prior to smoking. Smoked @ 225° for 4 hours (B&B Hickory Pellets) Wrapped @ 225° for 2 hours (Brown Sugar, Butter, Honey) Rasberry-Peach BBQ Glaze applied and finished @ 250° till glaze is set up (50 minutes for me). ![[Linked Image]](https://texashuntingforum.com/forum/pics/userpics/2022/09/full-8162-361254-r4.jpg)

Lots of pellet smokers on here, is that a separate league from real smokers? How does that work? I guess with pellet smoking, you got to be really good at pressing iPhone app buttons? I’d put my pellet smoked ribs or brisket up against your “real smoker” in a blind taste testing. Yeah, but that is cheating. Like fishing pole vs fishing net.. Not cheating, that is how you are suppose to cook dove. Dove is boring on its own, like hamburger. You don’t just put a hamburger patty on a plate and serve it, your taste buds will be bored to death. No, you melt cheese all over it, couple slices of bacon, onions, on a toasted bun, lots of mayo, now your taste buds are dancing! Chili for cookoffs has no beans, no visible onions, is small chunks of meat, the right texture, the right color, the taste that as soon as a judge taste it it says chili, and a slight after taste and burn. If you get a cup of it the first couple of bites is good after that you start saying,(I don't know about this") It took me a long time to learn the tricks of the trade. There are people who cook good eating chili in cookoffs but they don't win.
