Took 14 hours but it came out fantastic. Finished cooking at midnight last night. Wrapped it in a towel (it was in red butcher paper) and put it inthe ice chest to rest. It sucked almost all the juice last night. Has really good smoke flavor and the first words the wife said was wow, this is tender. So I am happy with it.

I have a question for the smoking Gurus on this post. Plan to smoke a brisket on the 4th but all I have been able to find is large 14-16 lb briskets. That is way too much meat for the 5 people involved, would it be better to cut it in half and freeze the other half raw or would it be better to cook the whole chunck of meat, then cut in half and freeze? Thanks Daniel

If you have a vacuum packer use this to freeze. Reheat in the oven and will taste like you just took it off the smoker.

Yes for most of the cook. Usually don't but I was experimenting. Turned fat side up once I wrapped it.

If you get a packer you will need to trim a lot of fat. For five adults, you should make a pretty good dent. Leftovers and sammies will probably finish it off in a couple days.
