Got us started at least. Deboned, sitting in the marinade with olive oil, garlic, lemon, chives, mint, sumac and s&p. Tomorrow, I will add rosemary, roll up and wrap in butcher twine, then sous vide at 127 for 4-6hrs. Then sear in the broiler for 5-10min. Served with rice, tzaziki and cucumber salad….I think.

Looks excellent. I've never had lamb in my life. Been wanting to try it but man from what I've seen they are dang proud of it.
