I made some bone broth from a few doe carcasses. By "some" I mean 4 gallons. Made some pho with it a couple weeks ago. Pho king tasty.

Pho is on the monthly rotation for me. Sometimes I’ll have it 2 or 3 times a month. It’s a wonderful dish.

I like pho without the pork belly. I know many who love it, but I just don't like the slimy texture of pork fat. That said, a hot bowl of pho with Sriracha a cold day to clear your sinuses is satisfying.
