A buddy for some reason feels I am special, he bought me a who NY strip and these dry aging bags I didn't know existed. They are definitely going to be tender !  The meat is super tender feeling to the touch, also the fat has the texture of almost room temp butter. Saturday can't come soon enough.

Are you going to trim the dry aged crust off of it? Curious about this too? If yes it appears you are going to have some pretty significant loss? I'm not really familiar the full process of dry aging, but seems like all of the dry aging I have seen has the dark discolored portion trimmed off. Is the dark part rancid? I don't know, just curious?

Are you going to trim the dry aged crust off of it? Curious about this too? If yes it appears you are going to have some pretty significant loss? I'm not really familiar the full process of dry aging, but seems like all of the dry aging I have seen has the dark discolored portion trimmed off. Is the dark part rancid? I don't know, just curious? You do lose a little but of trimming off the "pellicle" off, which I guess is the fancy word for the leathery crust in this situation. It is my understanding you can leave it on and it gives it more of a funky flavor. I will try one with the outside left on it.

Please post your opinions on it after. I will, I can tell you I lost a lot on the edge pieces, I cleaned them up and got cute little petit steaks out of them.

The bags work real good. I've been aging steaks with them for over 3 years now. If your a steak eater watch out. I only eat ribeyes so that's all I age. I do have a tinder lion aging right now for 36 days. I've done 28, 36, 45, and 65 day aging. I prefer 45 days. Fresh ground pepper, cosher salt and I use avacoda oil, you can use olive oil thats all you need to cook them. Very tender with lots of flavor. Run internal temp to 123 degrees and let them rest for a few minutes. That's my 2 cents.

Thanks, I usually cook our steaks to 129°, I am thinking about when prime rib goes on sale around Christmas I am going to age one of those.
