Has anyone had a processor make duck/goose sausage near the Houston area? I've never had any made before and would like to use a processor who has done it before as I'm not too sure on what kind of ratio to pork is preferred or anything of that nature.
Thanks for any info or recommendations

Not sure about sausage, but duck/goose/crane/pheasant jerky is the best I've ever had...

I don't have a recommendation for a processor in Houston, but it's really easy/fun to make your own sausage. I use a 50/50 duck to pork ratio, but I know others like 60/40 or 75/25. Just make sure you get fatty pork butt or shoulder.

I make both duck jerky and duck sausage. You can use the same recipe you would use for venison as far as seasoning goes. 60% duck to 40% pork fat is what I would recommend.

My buddy had some duck and goose summer sausage made at Green's Sausage House and it was great

Juniors in Wharton, they'll take care of it. A second for JR,s in Wharton. Try some as summer sausage with jalapeno cheese.
