I'm looking for 2/3 deer with 1/3 pork....to make link sausage, in a combined 50 pounds of meet. Anyone got a killer recipe???

Deer, wildhog, some cajan spices, & such. We run threw grinder, mixed in spices, through some bacon chunks, mix run threw smallest grinder holes. Make several golfball size, flatten, fry, secret, add to taste. each has different.

I'd like to hear some too...
Last year I went 2/3 whitetail and 1/3 of a pork butt
I then used a Cabelas brand seasoning kit
Meh, it was average at best. I wouldn't use it again, not bad but not great.
I will prob just have a processor make it for me if I don't hear of any good recipes

The usual mix is 60/40 venison to pork. Can be leaner if making dried sausage only. Seasoning for 100 lbs. This is an old seasoning recipe from Castroville TX. 2 lbs canning salt (4 cups) 6 oz black pepper 2.5 oz garlic powder 8 oz coriander 1.5 oz cloves 1.5 oz all-spice 1.5 oz nut meg 1 oz sage Red pepper flakes to taste  Oak smoke only!

I recommend finding this book, Great Sausage Recipes and Meat Curing Book by Rytek Kutas, he has sausage recipes from all over the world. The company he founded also sells sausage seasoning mixes, about 20 years ago we bought some of his mixes, and through the years found them to be as good as the best that we used. But in the last few years our equipment has sat idle, too much work trying to make sausage for only 2 people.

I use Smoke Sausage Seasoning from Zach's Spice Company. Its got just the right amount of spice and garlic and the only seasoning my family has really liked out of numerous seasonings that I have tried. If you are using 1/3 pork, get some pork that has a high fat content so your sausage doesn't end up dry Zach's Smoked Sausage Seasoning

I just go into Fischer's and get them to mix me up their blends, don't buy the stuff already packaged in the bags by Excalibur. Most places will sell you their mix.

Bro has several, he makes best deer-jerky tasted, made some hog-jerky. Cool thread.

Haven't tried this one yet, but I like the simplicity 5 lbs meat 3 Tablespoons Kosher salt 1 Tablespoon Garlic Powder 2 Tablespoons Black Pepper

I use A.C. Legg's seasonings for patty and they have a pretty good brat seasoning for links.

I find most sausage recipes have way the hell too many ingredients in them. Same here. For links I like salt,pepper and mustard seed.

Here is mine. Since the making of this I've found a much cheaper source of Sage. People are proud of that spice, kind of expensive.
