Springbok in Africa is my all time favorite.
Here....oryx is good.
Quail is toward the top of the list as well Had springbok tenderloin last week in S Africa. It was fantastic.

Hmmm, good question. Most favorite:
1) Elk 2) Red Stag 3) pig 4) pheasant/quail 5) axis 6) whitetail 7) squirrel
Least favorite:
1) rabbit 2) nutria 3) opossum 4) bobcat 5) raccoon 6) bear
Never eaten, moose, eland, blackbuck, African species

bass especially big giant 10 lbers Gawd dang, might as well skin and cook a bald eagle! Hey, don’t knock it till you try it! Bass on the half shell is tremendously good table fare! In fact, I keep any bass over 5 pounds (subject to lake Length limits) just for that specific purpose. A 10 lber will make great party appetizer grilled on the half shell. And since we are on this subject, my favorite fish: 1) crappie 2) walleye 3) mahi-mahi 4) swordfish

And since we are on this subject, my favorite fish: 1) crappie 2) walleye 3) mahi-mahi 4) swordfish I've caught, cleaned, cooked, and ate about 500 black bass. It is some of the best fried fish there is. Anything over 3 pounds went back. We had access to a 15 acre private lake that was over populated. Kept the 1.5 to 3 pound fish, threw back the smaller and the larger. A year later, a vast improvement in fish size. Another year later, it was even better.

Pretty well since I was a child we have almost exclusively eaten wild game. The majority is made up of WT deer, feral hogs, and fish of all kinds.
Recently made a dish we had never made before with ground venison and it was really good. Made it again and invited the inlaws (they don't really like deer meat except for in dried sausage) so I made it with ground beef. They thought it was good, I can honestly say I took a bite and said the recipe was better in every way to me with the deer.

My favorite game dish would probably be a steak or medallion cut from the tender loin or the eye of the bottom round, best cut of meat on the whole animal if you ask me. Rare rare rare, salt black pepper and garlic.

I've eaten probably 40+ wild game meats in Africa and here in the states. The ones in the middle could easily move up.or down a few spaces based on sexof animal and cut etc., most.of what I've eaten has been make trophy specimen so obviously a cow is generally better except with Axis even the old bucks I havent noticed a difference from does.
Eland Bison Bushbuck Kudu Scimitar Oryx Axis Moose Impala Blesbok Jap. Sika Sable Pronghorn Gemsbok Fallow Elk (cow probably higher disnt like the bull near as much) Blackbuck Red Stag (rutted.up so maybe bad comparison) Mule deer Whitetail

All the sandhill cranes ive cleaned up the meat real well, marinade in favorite marinade over night, grill rare to medium rare but do not overcook. tastes like a top dollar steak to me.

And if we are throwing fish in there id say crappie/largemouth bass and walleye are top for freshwater, ive always wanted to try fried gator gar but havnt killed one yet.

Hey guys don’t bother...I tell them the same thing over on TFF...and yes, there are a few that get testy! FYI, I quit bass fishing probably close to twenty years ago after an incident at the boat ramp. Some fella with a new bass boat, new truck and a big attitude took exception to me and my fishing buddies stringer of fish. We each had a limit of crappie, a limit of big bass (all over four, mostly in the six to eight range), and some catfish. The fella got nosey, asking questions, and watched as we emptied the fish from the live well into our cooler. After almost coming to a real dogfight between him and my buddy (who wasn’t much on backing down), I got them separated. Evidently, he seemed to think all the bass in that lake belonged to him, for some strange reason. As we were leaving the boat ramp, I told my buddy, I just wasn’t gonna bass fish anymore, but every legal bass I caught from that day forward has went on the stringer, regardless of size. Even though I don’t fish for bass any more, I still catch some fair numbers of them, while chasing crappie. Further, The law says I can keep them and I do. And anybody that knows me knows that’s true. I cook the bigger ones just like I do redfish, on the half shell out on the grill. And they are delicious.
