Had a venison roast last weekend and it was great. Anybody have a recipe for an uncooked ham?

Yep...grind it up and make summer sausage or burger meat!

put a good brisket style rub on it iesalt garlic black pepper red pepper smoke it for about 5 or 6 hrs put in in a aluminium pan completely seal top with foil cook in oven for 12hrs 225deg. center bone will pull out clean as a pin. take tongs and pull meat like pulled pork. sandwiches, tacos etc. you will be surprised at how much juice is in pan when you finish cooking it.

Now that sounds good, what temp? I usually smoke my briskets at 200-225.
