.30-06, .243, .308, .223 is what I use. But whatever you have that will lay them down will work.

Ar-15(1-9 twist) with Hornady 40gr Vmax is incredibly accurate and fast(3800fps)...and puts coyote's down. Having a quick second shot is nice when you encounter more than 1 coyote...although I've yet to hit one running, but I keep trying.

If you want the pelt then a 17hmr is good. If you dont then the 30.06 does just fine.

Get a 460 Weatherby, and never look back......just kidding. I grew up out in the Odessa area and grew up hunting coyotes. We always used our deer rifles, but if the gun is going to be dedicated to coyotes, then i'd go with a varmit round. Most any of the .22 caiber centerfires will do the trick. The .223 ammo is usually the cheapest because it is als a military round, and you get more per box. But .204 ruger, .222, .223, 22-250, 220 swift. They are all awesome Coyote rounds!
