Had beautiful pork tenderloins on sale, BOGO so only about $2.50/lb. This dish actually works wonders with deer or elk tenderloins, as you only need to get the meat to 125 degrees for med rare, and the puff pastry shell doesn't get overdone! Pork needs 145, and I over ran just a little bit. Last spaghetti squash from the garden and nice broccoli with cheese sauce. Need to make pretzel bites tomorrow with the leftover cheese. Chopped baby Bella mushrooms and shallots, and dijon mustard to hold the prosciutto in place.

That looks good. Was the juice worth the squeeze. I like pork tenderloin for just putting on the grill for about 3 minute per side and supper`s ready. Almost no work involved.

It was good, but not great. Great pork is simply fried pork chops, mashed taters and skillet gravy!!!
