My cousin recently gave me a few pheasant breast. Not really sure how to cook them. Any suggestions or good recipes would be much appreciated. Thanks!

I tried getting fancy one time and doing a whole bird herb roasted thing, wasn't nearly as good as chicken fried with gravy.

I put them in a crockpot for 4 hours with a can of cream of celery soup. Chop up half an onion and a couple stalks of celery to go over the top. Add seasoned salt and pepper to taste. Then serve over mash potatoes or white rice. Easy and tasty.


To be sure of hitting the target, shoot first and call whatever you hit the target.

Thanks for the suggestions guys. I was thinking of slicing them up and adding some onion and bell peppers and cooking like fajitas or hobo style in foil and adding taters, jalepenos, onion and bell peppers.

Not a bad idea. Pheasant will be tougher than chicken, but should still make a tasty fajita.

If I have a whole pheasant that is not badly shot up, I will always either smoke it or roast it whole. I leave the wings and legs on mine when I can. They look good and I don't want to waste the meat.

I dry brine them overnight with kosher salt and if you like rosemary and thyme add some.

If I have a pheasant that is shot up and not very presentable the fajita approach is a good one.

Slice into smaller pieces and make some jalapeƱo poppers. Some Cajun seasoning blended in the cream cheese, diced pineapple and wrapped in bacon on the grill. Works great with dove and duck too.

You are in for a treat most any way you prepare it. Here are a couple I like.

1.
Filet each side off the bone. Pound each side with a mallet until you have two thin and almost plate sized filets. This will take care of the tougher than chicken that dkershen noted. Submerge each filet in an egg wash. While the filet is soaking in the egg wash, crush a sleeve of saltines in a gallon ziplock down to cracker crumbs. One at a time shake each filet around in the cracker crumbs, another dip in the egg wash, then back in the cracker crumbs. No other seasoning is needed. Fry on medium heat until the cracker crumbs are golden brown and crisp on both sides.
2.
Brown the breast meat and slice up like you are making fajitas. Then simmer in Alfredo sauce for one hour. Pour over top of fettuccine noodles.
