For those cuts of meat that may be a little tougher to chew. Cut to about 1/4" or pound to flatten and tenderize a little bit. Red wine and mushroom creamy gravy, simmered under cover for 2-2.5 hours until tender, and served over rice or noodles. Yummy!!

The gravy looks great. I like eye of round for several things. HEB runs them on sale for 3.47- 3.99 now and then and I buy them and cut them into jerky, 1/4" steaks for steak fingers, CF steak and smothered CF steak. It makes very good stir fry if you like that as well. I like putting one whole in a crock pot and cook to 205 internal. I then remove and slice it about 1/4" and return to crock pot for about an hour. It has way more flavor this way, very tender and not as dry.

I cut eye of round into 1-1/2" to 2" steaks, then Sous Vide for 24 hrs at 130F. After drying them and cooling them off, season as desired and slap them on a hot grill or griddle for just a minute or two. Folks are always surprised at the flavor and tenderness.

One of the better values out there, for a nice useful cut of meat with excellent flavor. When it's cheaper than burger, how can you go wrong?
