Not sure if anyone follows these guys but they did an interesting experiment on dry aging whitetail backstrap for 1 day, 1 week, 3 weeks and 6 weeks. Skip to the 20 min mark for the results.

Folks that don't age their game are really missing out.
We've dry aged for years, mainly because we have the right climate for it.

Great video. I've wet aged vacuum sealed in the fridge but may look into a dry ager.

I would love to have a dry aging fridge. Its only money right?

excellent video and while it is completely subjective, the aging process does a good thing.

We hang and dry age in our garage unless it's too warm then we fire up the Coolbot at the ranch and hang there. Not expensive at all to have a proper place to hang or age meat.

We do 2-3 weeks. I was told there isn't much to gain by dry aging a doe, but it makes a big difference.

I have made a frame/rack to hang next years deer/s in the extra fridge I have. I ran a test of the temp control and marked on the dial where to get 35. Think I'll give it 3 weeks. Sure hope it's as good as they say!
