I tell my hunting buddies that my breakfast sausage isn't going to put Jimmy Dean out of business, but it's still pretty good.
Their reply is that "'Ol Jimmy may not be going out of business, but he's probably lookin' over his shoulder..."
My sister-in-law fixes a breakfast casserole for her church several times a year for breakfast events that they have. I give her breakfast sausage to use, and so far no one has complained.

I take the leg quarters and backstraps from just about every hog I shoot. The only time I leave one is when I shoot more than I can clean at one time. Three is pretty much my limit these days if I'm hunting alone.

Be sure you cook to at least 165 degrees.

I used to butcher and keep hogs I shot that passed the smell/look test. Did so for years. Till one night I shot some with a thermal that were gorging themselves on cow pies. I'm talking full on face covered in it. That day finished me off.

They seldom show up when I’m armed. When I do shoot one, I drag it off and walk away. Good pork at the grocery store isn’t expensive.
