Just my basic batter I use for any loaf with fruit in it. I can remember this, without hunting for a recipe.
1 egg 3/4 cup sugar 1 tsp vanilla extract 1/2 tsp almond extract 1/4 cup vegetable oil 1/2 cup of milk or half/half
2 cups all purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt
8-10 ounces of desired fruit (drained, if canned)
Mix the wet and dry ingredients separately, then combine and mix lightly Pour half the batter into greased bread pan Pour the fruit all along the center of the pan Cover with remaining half of the batter Bake 60 minutes at 350 degrees Top with butter, or cinnamon and sugar, or crumbles

I`m gonna have to make this. The recipe is very similar to my peach cobbler recipe that I make in a Dutch oven. I use 3x the number of peaches though, pour them in the bottom of the Dutch oven and the dry ingredients over the top.

Angus contacted me and tried making this, but had some issues, and batter was too dry. Gonna try to modify a little, so increase to one cup of milk. Should be thick, but still pour and spread. In his oven 60 minutes was too long, so 50-60 minutes. Toothpick should come out clean when done. May have been difference between my electric and his gas oven
Sorry for any failures. Again, baking is chemistry plus magic!!!

Cook top is gas oven is electric just cooks hotter. Thanks for the feed back.
