Had a bunch of hard taco shells that had been open. With the high humidity over here, they tend to get stale and rubbery quickly, so you need to cook again to get crisp. Cooked a whole chicken in the InstaPot so I could shred it. Mixed with cream cheese, Hatch chiles, fajita seasoning, cumin. Layered in refried beans, chicken mixture, and cheddar cheese. Baked 20 minutes and served with regular fixings. Since the oven was on anyway, caramel apple tarts seemed appropriate for dessert.
