All I did was flour, then egg wash and then back to flour, nothing fancy.

You need to expand your horizons. Southern tomato gravy is far from marinara. Start with a nice blond roux, bacon grease, chicken stock, diced tomatoes, S&P. Some grandmas like a little cream to make it silky.

While different areas of Italy or Sicily interchange words sauce or gravy, this is uniquely Southern. There are no Italian or Mediterranean spices at all.
