Went to Lubbock last week and shot a few Sandhills. I typically grill them like a steak but the weather this weekend may be too nasty to fire up the grill. Anyone have ideas on what to do with them indoors? Flat iron? Stir fry? Maybe smothered in the oven?

Fire up the grill. It's not supposed to get bad until late Sunday/early Monday morning. I'd roll that dice.

Pan sear and do not overcook them. Salt and Pepper only.

Crane is pretty good, and here in SE Idaho in the Fall ours are all grain fed. Overcooking ruins them. I find I need a little Smokey and sweet with it like raspberry chipotle, or smoked bacon pepper jam

Beer and whiskey, 'cause you can't drink bacon!!

Yep, that's what I ended up doing on Saturday. Weather wasn't bad at all. I was expected the north wind to be howling, but the weather guessers missed it.

How'd they turn out? Always heard how good they are but never had any.

Great! I lightly dusted them with Fiesta Steak Seasoning and cooked to medium rare. Wish I had snapped a pic or two, but I never think about it.

Glad the weather worked out! I alternate between Fiesta and Tex-Joy. Both are really good on any meat. cheers
