OP 68rustbucket THF Celebrity 6 Joined: Oct 2008 Posts: 18,414 San Marcos, TX	Fired up the Jambo this morning for the first attempt of a brisket on this unit. Brisket went on at 9, a slab of pork ribs at 9:30. Also have the trimmings from the brisket rendering some tallow.

I poured some hot tallow on top before wrapping, but it washed off some bark.
