Fired up the Jambo this morning for the first attempt of a brisket on this unit. Brisket went on at 9, a slab of pork ribs at 9:30. Also have the trimmings from the brisket rendering some tallow.

Ribs look great  Didn't you buy that Jambo smoker not to long ago? Ribs turned out better than last time. The cold weather was a new experience with this pit. Yes Stub, haven’t had it but a few months. Just pulled the brisket, it’s probing tender. Cooling now, then into the warm Yeti for a nap.this was my first brisket attempt on the Jambo. 12# Prime, about 8# after trim. Rendered the trimmings for the tallow. I poured some hot tallow on top before wrapping, but it washed off some bark.

Wife and I ate 2/3 of the rib rack. I’m pulling the brisket out of the Yeti around 8 tonight. I’ll be sampling shortly after that.

Hot enough to fire up the offset today. Wanted to take some vittles to camp this week. Turkey breast, couple chickens, and a rack of pork ribs. What size smoker were you using before and can you tell any difference in the smoke flavor/ results using the Jambo. I know it`s hard to reproduce the results of those 1000-gallon smokers they big boys' use with a smaller smoker. I use a small offset (36x20 with a 20x20 fire box) and it does pretty good, but I've been using an offset that size for 40 years.

I use a small offset (36x20 with a 20x20 fire box) and it does pretty good, but I've been using an offset that size for 40 years. My previous smoker was that size also, but with a smaller fire box. It was way more labor intensive on keeping a steady temp. I gave it to my son recently. It was a learner. The Jambo is like setting cruise control, get it up to temp and add a small split every 30 minutes. Also I have way more grill space now for bigger cooks. I recently changed to a TruTemp thermometer, it seems to run lower than the original thermometer. I tested the TruTemp before installing. I’m gonna test the original thermometer soon.
