Gumbo, chili, stews, and casseroles are all always better the next day! That gumbo looks fantastic!!

I have to ask, planning to make some this weekend maybe for a 1st time. Would it be acceptable to use course ground sausage- not cased and roasted green chiles instead of bell pepper?

That sounds great! Gumbo is great with whatever is leftover in the fridge! A good dark chocolate roux and cooking long and slow is what makes it great to me. I have been poor at bird hunting this year so this one is chicken and andouille but I love duck or goose gumbo. That dark meat is rich and delicious!
