This was a pretty tasty multi-course meal in Pienza. I’d recommend checking the place sometime.

How are you preparing the quail?

I’ve shown a few people pictures of good brisket and now they want to visit Texas.

Small spiral ham. Green beans, shallot, onion sautéed in bacon fat with rendered bacon bits simmered in chicken broth and reduced and mashed golden taters. Merry Christmas to all.

We did bacon wrapped Beef Tenderloin. I did the grilling and Dad did the kitchen cooking. It must have been good because there wasnt much left except for dessert. We first started doing steak a few years ago and everyone seemed to enjoy it more than the turkey and ham so we kept doing it. Cost is about the same and less labor intensive than Turkey and Ham so thats what we will continue to do as long as I am doing the cooking.

Steak and taters. Homemade ceasar dressing with anchovies and aged parm sets it off.
