The real whipped cream is the easy part. That creamy smooth subtle chocolate tasting filling that only a Grandma can make probably isn't written down anywhere. I don't know how she did it.

Chocolate Cream Pie (No Bake)

Ingredients


1 9-inch Oreo Crust (or store bought) pie crust
* 4 ounces unsweetened chocolate, plus a little more for shaved topping
* 1 14 ounce can sweetened condensed milk
* 2 cups heavy whipping cream
* ¼ cup powdered sugar
* 1 teaspoon vanilla extract

Instructions

* Chop chocolate, and place in a medium-sized microwave-safe bowl. Heat on 50% power in the microwave in 30-second increments, stirring between each, until melted and smooth.
* You can use a double boiler, if preferred, to prevent overheating
* Stir sweetened condensed milk into chocolate. Set aside, to allow cooling. Doing this before making the whipped cream ensures the chocolate cools enough. Otherwise, let it sit about 5-10 minutes before using.

* Place heavy whipping cream in the bowl of a stand mixer (or a large bowl if using a hand mixer). Beat until stiff peaks (whipped cream) forms, slowly adding powdered sugar and vanilla during mixing.

* Carefully FOLD half of the whipped cream mixture into the chocolate mixture. Do not stir or you will break the whipped cream. Place in prepared pan. Top with remaining whipped cream. Shave extra chocolate on top, for garnish, optional.

* Chill pie at least 2 hours before slicing and serving. Store loosely covered in refrigerator.

Not Chocolate "Cream" Pie, but an awesome old-school chocolate pie. My mother was a gifted scratch baker and this was my Dad's request for his birthday every year.

3 eggs, separated
1 cup sugar
2 squares baker's chocolate
pinch salt
1/3 cup cornstarch
2 1/4 cups milk
1 tbsp butter
1 tsp vanilla

Mix sugar, cornstarch and salt in saucepan. Add beaten egg yolks, chocolate and milk. Blend. Cook until thick, stirring constantly (this lumps easily; beat with rotary beater if needed). Add butter and vanilla. Pour into a baked 9" pie shell and cover with meringue. Meringue recipe: 3 beaten egg whites (beaten stiff), 1/3 cup sugar added gradually and finished with 1/2 tsp vanilla. Brown in 325 degree oven.

Looks fantastic. I always have my wife add three more whites to the Meringue, I like it piled high.
