Had a corned beef than had been in the freezer for much too long. Decided to roast it up nice and tender in the Insta-Pot. After I started it, found I was out of potatoes, cabbage, and carrots for a hot dinner. Then I didn't have any marbled rye for a sandwich!
Just like the TV show Chopped, just roll with it. Let's just roll up some Reuben balls, stuffed with meat, sauerkraut, chopped Swiss, and TI dressing. Dijon dipping sauce and the rest of the TI dressing. Pretty darn good dinner!!!!

Even had time to cook up some mini cheesecakes for Sweet Tooth to enjoy.
