I was in Pearsall over the weekend and I warmed up the tamales on an old protein barrel turned grill.

Nailed it! In a week or so I'll be smoking a pork shoulder so my wife can make about 7 dozen for Christmas.

Love mesquite fires. Hardest thing is waiting for them to get right, then you can sit around and cook for hours at the proper heat!!

I would have wrapped them in foil to keep them from drying out (moist heat) but that`ll work fine. I`ve got 6 dozen homemade tamales ordered for Christmas (15 per). I vacuum seal mine (6 per) and the sous vide for about an hour at 165 degrees.
