My buddy and I are going on a Snow Urial hunt in south Texas in two weeks. For those who have hunted them how's the meat? Any special preparations or ways you like to prepare it? I was thinking about smoking one of the hind quarters? How are the chops and back straps?

Thoughts and thanks for your insight!

Id agree with bread man. The sausage is ok. I’ve had decent luck using the backstraps to make vindaloo or other types of curry. But honestly there are so many spices in those not sure the meat matters.

I was just talking to a guide a few weeks ago about this, said some folks just can’t leave an entire animal to waste . Then he said, they always come back wish they would have left it. You just can’t make it taste good

Thanks everyone, I wasn’t sure so I thought I’d ask.

We made breakfast sausage with it, which wasn’t bad, but it was better in chili.
