Put this on around 5 a.m. this morning. Total cook time was 8 hours (+/-). Let it cool for an hour and then let it rest in cooler. Decided to slice the lean this time instead of chopping. Pretty tasty for a pellet smoker. I was all out of oak wood so no offset this time. I was also a little on the lazy side.

Once I get a decent bark (around 160-170 internal) I wrap in foil and put into the oven at 300 degrees. Doesn`t take long after hitting the oven.

Mine always seem to stall at about 165 anyway, so that's my timer for when to wrap in foil, and crank up the heat until done! smile

Looks great food

I don’t know if it’s bias or real, pellet smokers turn out some amazing looking food and it tastes good too, but I feel like in general stuff cooked on an offset with wood tastes better. Not that the pellet smoker is t good just different to me. You can’t debate the convenience.

I agree 100%. I`ll smoke a brisket or ribs on my RecTeq now and then but much prefer my offset. I will not smoke pork butts on my pellet smoker at all. Just not enough smoke for me.
