Anyone know a grandmaster knife sharpener?

Envisioning a 90 y.o. Japanese samurai looking dude in a straw hut.

Have an old meat cleaver that is like to get re-profiled/ sharpened.

Sur la Table used to sharpen knives. Not sure if they still do.

Also, a neighborhood page suggested a young guy named Will 214-972-7923.

Veiga Knife on Gaston Ave is where I've heard good things about. I've never been there myself though.

Sur La Table has 2 locations in DFW.. Fort Worth and South Lake..

they do still offer knife sharpening services... and do a very good job on quality kitchen cutlery... they did a great job bringing our Wusthoff knives back to like new edges..

the problem the OP is going to have is... they dont sharpen cleavers (they speak to it specifically on their website)...

I dont know.. the only thing I have ever taken them is kitchen knives.. but I would imagine they could/would do pretty much anything with an edge on it that isnt too thick....

Certainly worth giving them a call and asking I would think..

Its been several years since Ive used them... I started making knives as a hobby a few years back and invested in some really good equipment.. I figured if Im going to make knives, I probably should learn how to put a good edge on them as a priority lol.. so for me I do all sharpening at home these days.. smile

Have one going now. Big butcher knife that started out as an industrial hacksaw blade. High carbon steel. I no longer mess with stainless due to sharpening differences.

Buy a Work Sharp…..takes about 2 minutes to sharpen any knife…
