Picked up my new smoker yesterday in Burleson. Met the famous Jamie Geer, had a nice visit with him. He quit taking orders not long after I ordered mine last July. His grandson will be taking over the business soon. Now I need to get a membership at Costco and get to cooking!
Patio looks really bad with this shiny unit on it, will be planning a backyard makeover.

Man, that's flying first class. Great looking smoker and love the Bronco. I've come to the conclusion Costco has the rudest customers on the planet. I went Saturday and man I got PO'd at the rude behavior of shoppers. Thinking I might try Sam's out. Congrats, post up some brisket and ribs.

flame Are you nutz! Man, when we had a membership, I could only handle Wednesday, at 10am when they opened. Those customers block the aisles just for the hell of it and it's an all-day event for some of them. Life's way too short for that crap.

I don't have an offset anymore, used to have a 250 gallon pit, but sold it 7 years ago. Stopped doing cook offs, so didn't get much use at all for a couple years. That test is something I saw one of the big pit masters Tuffy Stone do when testing out a new pit. Just to see how even the heat was distributed across the cooking area.

First 3 hour test fire went off without a hitch today. Got a cheap loaf of white bread and spread it out, 20 minutes @275°. Only hot spot is right next to firebox deflector plate, just like the builder told me. Upper shelf on left is called the microwave shelf, it runs a little hotter. Will make a meat run in a few days.

Fired it up for a rack of St. Louis style pork ribs today. Wind changed from SE to NE mid cook, so temp control was challenging. Left them on a little too long, so fall off the bone. But wife and I were happy with them.
