Thawed out this nice eye of round(?). Seasoned it last night after a few beers so we'll see how it tastes, lol. We're supposed to get up above freezing today, was about 29 degrees when I fired up the Yoder, so I thought why not smoke. Red oak and some pecan wood. Seasoned, I think, to go with a Santa Maria style smoke- the red oak. Snow should start melting again by noon or so, we got about 6 inches over 2 days. I have 20lbs of Anasazi beans i vacuumed sealed and in the freezer. Damn they are good. After reading your post think Im going to set some elk out to smoke tomorrow, and think going to make beams to night, Think I have a ham hock or small pork butt. Looks great BOBO !! Put the elk on at 11. I'm thinking maybe 3 hrs total for smoking and getting it cooked to med. rare or so.
