Thawed out this nice eye of round(?).
Seasoned it last night after a few beers so we'll see how it tastes, lol.
We're supposed to get up above freezing today, was about 29 degrees when I fired up the Yoder, so I thought why not smoke.
Red oak and some pecan wood.
Seasoned, I think, to go with a Santa Maria style smoke- the red oak.
Snow should start melting again by noon or so, we got about 6 inches over 2 days.

Made a pot of Anasazi beans yesterday to go with, they turned out great.

I have 20lbs of Anasazi beans i vacuumed sealed and in the freezer. Damn they are good. After reading your post think Im going to set some elk out to smoke tomorrow, and think going to make beams to night, Think I have a ham hock or small pork butt.


I had elk back strap salad for dinner.

Put the elk on at 11. I'm thinking maybe 3 hrs total for smoking and getting it cooked to med. rare or so.
I'll probably take some downtown to our brewer friend at the bar, he likes game meat.

2 hours of smoke , time to wrap in foil and finish with a little higher heat.
Yesterdays beans are simmering on the stove.
