Has anyone ever mixed beef with their scimitar oryx meat when grinding it up? It seems that oryx is a very lean meat and I want to see what everyone has done when grinding up the meat. Thanks in advance!

I had mine mixed with beef fat, 5%, which I think is normal. It turned out pretty good.

Don't know how simiar Nilgai is to Oryx, but it's so lean you can't make a patty with it by itself. Fixed it by mixing in 10% brisket. When wifepoo developed her beef allergy, we changed the brisket out for picnic pork and all remained good.

Just another thought on cooking here...I often mix in Ghee when I go to make burgers. I find it doesn't alter the flavor of the meat, and with an oryx I'd want it the least altered as I could. Plus the ghee especially has a higher smoke point than regular oil/butter/fat so you don't over char the burgers and they turn out real juicy. Either way, enjoy!

I stopped using beef suet in all of my ground meats except elk many years ago. I use pork shoulder instead, and love the mildness and flavor!!
