Found out about these beans last summer. I buy Anasazi beans from Adobe every year so though I would give Bolitas a try. They are suppose to be like pintos, a little sweeter, and absorb flavors very well. They cook faster and don't need an overnight soak. Also supposed to be easier on your digestive system, lol. Smaller bean and we'll see how they taste. Roasted green chiles going in with onion, garlic, cumin, chile powder and bacon ends. Tomato/ chicken bouillon for salt.

Have them boiling for about 2 hrs now so putting some seasoning in, no salt yet. Adding: Roasted green chiles- not sure if Big Jims or Pueblo but they are spicey bacon ends smoked Guajillo chile powder cumin Mexican oregano(?) maybe tomato/chicken bouillon at the end for salt and flavor I buy my beans from Adobe direct now, the farmers market markup was about same as shipping when I bought them locally. https://www.anasazibeans.com/shopping/beans.html

Like you said, soft/buttery/easy and take seasonings well. I called out your last name in jest, I saw you posting on a Cast Iron bookface group that I follow. My last name is Mize. If you/yall can't find the beans you're looking for just holler. Glad to ship to you., I've gotta try these beans, they look great and my curiosity has spiked lol.
