I have seen that done before and it does work and is quick. I don’t use it for two reasons though, 1) I like to cook and eat the whole bird, not just the breast, and 2) it doesn’t leave you anything to identify the sex of the bird.

Do it all the time with ruff grouse. Basically in 30 seconds the breasts are ready to be wrapped in bacon and put on the bbq. Legs/drums can still be used but require skinning or plucking. At camp the breasts rarely make it home - usually cooked up wrapped in bacon on the bbq and eaten on the spot. Legs/drums get put on ice and taken home and dealt with later. If the heart is in one piece it gets saved and fried up later as well.

I use a method similar for ducks. Then just pull the legs and thighs out.
