The She-Wolf and I hadn't done a "fancy-schmantsy" date night meal in a bit, so we got organized and put this together...

14ish oz chunk of cow elk backstrap, crusted in kosher salt and cracked peppercorns and seared in butter. I pulled it when I figured it'd land at "rare plus" after resting. In the remaining butter went onions to saute, then brandy to deglaze. Heavy cream and a bit of butter; reduce to the consistency you're looking for. Slice the elk into medallions with the sauce atop and alongside our greenbeans and crispy Parmesan potatoes. Amen.
