I usually don’t mix seafood and other proteins separate in gumbo. Shrimp, crabs, and oysters even with a seafood based broth can get overwhelmed as soon as you add sausage or fattier meats in my opinion. I’ve added duck to a seafood gumbo as wild duck tends to be super lean and it works well. If I do mix I put the sausage in at the very end so it doesn’t take over flavor wise.
