Making some Anasazi beans today, should be ready for the big Border War game tonight at 6, Wyoming vs CSU.

Soaking the beans now for a little while, they don't need several hours.
I brown up some bacon, not crispy, in the pot instead of salt pork. Add water and heat up to simmering.
Then add an onion cut in half to simmering water along with 2 or 3 cloves of garlic, and today roasted Big Jim chiles are going in.
Add beans.
Simmer for a couple or 3 hrs then add some tomato with chicken bouillon for salt flavor and simmer a bit more.

Anasazi beans cook much faster for us at altitude, pintos would take all day. These should be ok to eat by mid afternoon.
Beans before we go down to the bar to watch part of the game, should be fun.

Looking good! Yes she has some pretty good recipes.

If you like Anasazi Beans, I bet you'd really like Mayocoba Beans. IMO the texture & flavor is kinda in-between a pinto and a butter bean. They also cook faster than pintos and absorb more flavor than pintos too. I cook them pretty often.

Wow, bringing back memories. A decade ago or so I tried growing the traditional "Three Sisters," red Supai parching corn, winter squash and Anasazi for the beans. Small plot, but what a beautiful harvest.
The earliest Americans knew a thing or two!

Roger that. I went to a gardening class one weekend that taught the traditional 3 Sisters method, and I went home and put it to use. Had one heck of a cool harvest that I babied every day after work and was almost ready to pick.....and then the deer got in one night despite everything I did to keep them out and they ate every bit of it lol.
