While grilling fajitas out at the lake, I decided to try some Tablitas at a local meat market. I just got a little over a pound to make as appetizers to the fajitas. Man, did I make a mistake! Everyone wanted more. I tried half of one, and they were heavenly! Holy smokes were they good! This weekend I'm planning for about 1.5 lbs per person and cooking some more. This time it will be the main course! I had some a while back, but forgot how good they were. If you don't know, tablitas are cross cut ribs.

Did you go to Mexican Tienda? Another good one is three flags meat market right before the bridge going to Payne Springs. Try the al pastor. Both places have great tamales too!!
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.

Did you go to Mexican Tienda? Another good one is three flags meat market right before the bridge going to Payne Springs. Try the al pastor. Both places have great tamales too!! YES!! I picked them up at 3 Flags. We got all our fajita meat there.

That little place has some great food. Homemade tortillas, Guacamole, Tamales, and every kind of meat you can imagine. Same for Mexican Tienda in Mabank, and they'll cook it for you for no extra charge. I try to support local small businesses as much as I can.
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.

Me and everyone else used to sell them as Flanken Style Ribs back when I had a meat market (87-06). Didn`t really sell very good back then either. YouTube, Food Network and Mexican Restaurants have educated people on how to cook lots of different foods in the past 25 years after the internet evolved.

I just but the ribs at HEB or Wal Mart and cook them on the grill, not a fan of the sweet seasonings they use at the Mexican stores
