Haven't had a good scramble with tortillas for a while. Good mix of eggs, cheese, hash browns, sausage, and mushrooms. Home made salsa to spice things up!!!

When my kids were little, we used to have "sauceggs", that was sausage and scrambled eggs. And "beggs", that's bacon and scrambled eggs...And "deggs", that is duck and scrambled eggs...

That's a good way to do it, diced onions and jalapeno good ones to add... I saute diced onions and jalapenos from the garden in butter before I pour the egg mixture in. Add some browned diced ham near the end and serve on corn tortillas that have been warmed in a buttery skillet.
Pass the gravy.
