I haven’t had any good luck buying sausage. Something like you get at Hutchins or Terry Blacks.
The Texas Tech meat store got me thinking. Which, I will buy some of the green Chili 🌶️.

Would like something good, with a little spice to throw in the smoker.

Chapel Hill here the metromess is about as good as I can find. When in east texas, Renfros sausage found at brookshire brothers is top notch. Stock up in Lubbock though.

I have a hard time finding any without too much gristle. I chew on gristle, and I can`t eat anymore. I`m done with it and never try it again.

Rudolph's make an excellent polish sausage. My Dad and Uncle used it in their BBQ restaurants for over 50 years.

If not my own , but there's a sausage from New Ulm Texas I like. Don't know the brand name, buddy and I found it on a fishing trip at the Bluffton store on the way to Lake Buchanan. Was pretty dang good and looked on the package for where it was made guess that's the only thing we've paid attention to.
