No pics. Just a thought that popped into my head. Got my Cajun friend coming up in a few weeks. He’s bringing duck livers instead of chicken.
Anybody ever done this?

Haven`t had any livers in 25 years. Got some at KFC that were bad and haven`t wanted them since. Best chicken livers I ever had were @ New Yor Hill restaurant on I 20 near Mingus.

Sounds disgusting! But I hate liver of any kind! Agree, nearest I get to eating liver is use the liver for catfish bait and eat the catfish.

never had duck liver ... but would think preparing like chicken livers would be fine. roll in flour, egg wash, flour, medium heat grease

My biggest complaint about Cane's and Chik fil a is they don't have gravy and they don't have fried chicken livers so they're not a real chicken joint. Chicken E quality is hit or miss but that is my go to as well. Back in the 80's there was a chicken joint in Bowie my dad would go out of the way to get their livers and I remember them being pretty good. Don't think its still around though.

Also, for some reason buffalo chicken livers don't sound all that great to me. If I was trying to impress a cajun I think I'd brine them in water for a day with sliced hot jalepenos or serranos, cajun seasoning or red pepper / cayenne then fry like normal. Maybe dust with some spicy blend after they're done. Then you have nice crispy livers and not a soggy mess. Gravy is for gizzards, ketchup goes on livers so maybe some spicy ketchup also.
That's just me though.

Maybe dust with some spicy blend after they're done. Then you have nice crispy livers and not a soggy mess. Gravy is for gizzards, ketchup goes on livers so maybe some spicy ketchup also.
That's just me though. He’s a chef, I’ll never impress him. His gumbo has been featured on many different shows and articles. I also dip livers in ketchup, way better than gravy. I was pleasantly surprised when I fried dove breasts with buffalo sauce. The family loved them.

If you have a Bushes chicken place close they have gravy.

Chicken liver tastes different than beef liver. I don't love it, but I can eat it. Beef liver is just nasty. I like both.
