OK, I know this is late but.any inof on how to breast out a dove. Its been 2 years since I have gotten to do it. Thanks in advance. Billy

Pull off the head, cut off the wings, stick your thumb up under the rib cage and pull. Then filet out the breast meat from the bone.

Rip head off, rip wings off, force your thumb under the breast and pull the breast out.
I always pull the feathers from the breast area before I tear it out. Some do, some don't.

why cut off the head first??? i never do that! ur gunna be peelin back the skin anyway, and usually the head wont come along. heres how i do it, cut the wings off (u can do this first, or after, but usually easier to do it first) jam ur thumb up under the breast bone so that it looks like u have a puppet dove, and start pulling up and towards its head, i like to follow my thumb with my left hand, and the breast will come right off the dove, then afer u have the breast, u can peel the skin right off the breast by just pushing it from the bottom up! heres a crude, but a good way, and usually how i do it when we have a bunch of em!

i too leave the head and i cut the wings of last to make clean cuts on the breast? its just me

I always remove the head first, like right when I pick it up off the ground. I honestly do it only because it's how I was taught when I was a kid. I really don't see the point in doing it, but it's just routine for me now I guess.

Pull wings off, pull head off. Stick finger in hole where head was and pull. Takes no time. I've prolly done....a billion, maybe 2 billion this way.

I first cut all the wings off all the birds, just easier to work with the shears with clean hands. Then I go back thru and pull the breast out, and it is a snap with the wings off. You do not have to use shears, but your dove breast will look nicer if you do. If you do not use shears, then you will either have to break the wing bones with your fingers, or twist the wing out of the socket, this more times then not will also rip the breast. And if you break the bone, that just looks crappy.

I hope you don't kill many doves, you will be there a while I don't do this because i sometimes like to cook them on the bone. However, I have seen guys that can do it just as fast as the "conventional" method. I was amazed the first time I saw it done so quickly.

no need to cut head or wings...just like the 2 above: slide thumb under breastbone, push in, and flip up and with a few twists of the breast, it breaks off and just peel the feathers back and BAG 'EM UP!!!
Best and easiest way IMO!

we eat all our dove boneless. it is just as quick to filet the two pices off the breast. we used to do it the old fashioned way.pull head off,tear or cut wings off,poke thumb in,and pull out breast. then we would wash the breast take inside and filet the meat off the breast. i told my dad,why mess with breasting it,and pulling the wings off,lets just filet breast to start with. works great for us.

I usually do the above as well, just pluck the breast area, skip pulling off the head and wings. Expose meat by peeling skin back and push meat out with your thumb by sliding it between the meat and the breaste plate.
