Just shot my first Fallow and am curious about everyone’s experience with the meat.

Must depend on what they eat. I have shot two (buck and a doe or bull and cow, not sure what they call them haha)...my wife told me not to ever pass on one. She actually liked it as good if not slightly better than axis.

Only slightly better than white-tail or mule deer, nowhere near as good as red deer.

i believe Fallow were actually brought in to the states back in the day for their meat. When you used to go to a restaurant and order "venision" typically it would be fallow. i could be wrong though!

I agree. The fat really threw me off, even draining ground you could still feel/taste it in your mouth. Roast was worse

It's usually either Red Deer or Fallow if you order venison in a restaurant now.

Same care given to them all and I’d bet people couldn’t tell them apart.

Fallow is better than Whitetail not as good as Elk, Red deer, or Sika. The best venison is supposed to be Moose but I don't have any experience with it.

for every stereotype there's a prototype don't be the prototype

Have killed two fallow deer, both does. I consider the meat one step under white tail. It's darker meat. I've tried fallow and white tail side by side and could tell the difference.
