Last duck cookout I did, I tried to make "duck alfredo". Using blue wing/green wing teal
Essentially soaked in buttermilk for 24hrs, seasoned up the breasts like usual (Tony's, garlic salt, lemon pepper, etc....) and cut a few of them into small pieces... Cooked those small pieces on the griddle. Had noodles and alfredo sauce going on the stove. Mixed the two together.
Although it was pretty decent, it was very gamey (not my cup of tea.) When I make my poppers I make them on charcoal, which takes the gamey taste out of them significantly. I think trying to do that on the gridle was a mistake. I'll probably do that again, but grill the breasts on charcoal like normal.
Oh yeah! One that I for sure DO NOT suggest (This was a really dumb idea, I just had to give it a try):
Like above, soaked in buttermilk, seasoned, etc.... I tried to make the breasts like I do speckled trout filets. Make a bowl with tinfoil, load it down with butter, some beer, etc.... Sit that on the grill. Long story short, that was just straight up disgusting. My pup sure liked it though!
