What’s a good thin EDC with a shorter blade, maybe a little longer handle? Maybe similar to a bird and trout style
I want to get a nice knife for my bbq gun.

Scott McGhee at GuineaHogForge.com makes one called the Piranha which fits your description. I had Dink make a pancake for me; the sheath is essentially the same thickness as the handle.
I see now that Boker is making the Scott McGhee-designed knife as well.

I recently got this one from a maker in Montana, John Connor/Redmeadow Knives. It’s the perfect size to EDC in my opinion for a fixed blade. I got mine with a leather sheath that has a pocket clip on it so I can carry it in my pocket. https://www.redmeadowknives.com/about-1

Did you get a BBQ holster to go with your BBQ gun? If not, you need to get on that!

You might Google cowboy knives and look at the blade profiles and sheaths, the horizontal sheaths are popular with cattle folks up here. For both working cattle and hunting. https://www.southtexastack.com/home-and-ranch-knivesI'm betting someone on here could make you one just like you want.
