What is it about .308 that lead you to exclude it from your list? I've never had 7-08, but due to reputation and the opinions of those that know, I'd choose it from your list.
I have been very happy with the performance of .308 on 100 or more animals over the last 6 years. That's all my deer, a pile of hogs and some coyotes. Some of these shots have been 300-450 yards and it's dumped everything. I don't reload, and it's never been a problem finding ammo. Good luck with your purchase. Once you narrow down the caliber, ask the forum what rifle to buy. You and I seem to be the only ones still hunting with a 308 Win. My LR-308 is still a .308 Win Thats just because I haven't bought a 7mm-08 barrel for it yet.

Look at the # of offerings of ammo by caliber and then see how many are hunting bullets. .308 is near the top, if not #1 on variety and that is driven by demand. I got started on it when I was looking at the most effective short action and .308 is where I landed. I started shooting it and was happy with recoil (or lack of), then the first buck I killed with it from a 165 gr. SST bullet shot square in the chest at about 165 yards dropped like a sack of feed. Same results since then. This year, same results on a 230 lb whitetail. I'm not down on any caliber in the OP's list at all, just not familiar with them. I've also shot a BUNCH of pigs, a lot in the 180-220lb range with the same results. Tons of guys hunting with a .308. My current go to rifle is a rem 788 in 308. I do hunt with other calibers as well, but the rifle/scope combo on the 308 is my favorite currently

Of those three, 708. Now just choose the platform. If budget is tight, my daughter's Ruger American Predator shoots well above its price-point. x2

I recommend going to the store where you buy ammo and check the shelves. I have seen much 7-08. 308 however is very easy to find.
If the 3 you listed, 7-08 all day for the reason other folks said. But give the 308 a look if you haven’t.

I don’t think there are too many mainstream hunting options that won’t do what your asking of it in this scenario. Most important thing is to practice enough that you can do it.

.308 is the easy button, ammo is more readily available, even in most small towns if there is any ammo at all. It seems to have replaced .30-06 as the one ammo always on the shelf if anything is. The choice of ammo and components for reloading seems to always have something available during the shortages. .308 is super versatile. Loads can run from mild to wild. I’ve loaded 125 to 190’s for .308. For hunting these days, the Barnes TTSX (not the TSX which I do not like) 130 at 3100 has proven to be a nice choice for deer and pigs. This basically mimics a .270 Win, which while neither new nor glamorous has a well proven track record and is another to consider. 7-08 is a great cartridge, but ammo and component availability can be erratic. So, if this round is the choice, stock up and enjoy a fine round. The big factor in favor of .308 and 7-08 is they are mild enough to make practice enjoyable and reliably making longer shots in the field requires practice. Shooting a good group off the bench 6” from the bullseye at 300 yards after ten shots will not translate to a good result from a cold bore shot when cold, tired, and bleary eyed in the first light of morning. Most hunters are overgunned and underpracticed. The path to good results is a good rifle, a great scope, plenty of ammo, and practice. Practice hitting the bullseye, that is what matters.

Jeffbird you nailed it. Over gunned and under practiced. Most, myself included, ignore cold bore shots. When hunting that’s the only one that counts.

Back in the late '70's and 80's when I was repping firearms in 5 states for a Dallas based wholesale house ( and the sister locations Berns Wholesale in Denver & Ellett Bro's in Chapin South Carolina & later in 5 states for Stoeger, the SAKO importer. I settled on using 2 calibers 90% of the time. A 270 and a 300Wmg. Why? the average bullet drop at distance was almost exactly the same in both calibers in 100 yard increments until the target was past 5-600 yards.
One year I had won an all expense's paid free hunt in Wyoming one year by selling more Weaver scopes than anyone else in my Carrollton based company location , and killed a Pronghorn at a little over 500 yards with a dead stock 270 & factory ammo, while leaning against a fender of the Bronco and shooting offhand. Still got the pronghorn mount in the reloading shed.
Ammo is/was at the time available in almost every gas station or liquor store in hunting country....as long as it was a handful of calibers like a 270, 30'06 or 300 Wmg. My Denver based partner, who actually lived in Phoenix , bested me in the betting pot for distance of the kill by killing his Speed Goat at 800 steps (as paced off by the Weaver rep, with his 38" inseams) but the Denver based partner was also a semi pro trap shooter in those days and used to hitting targets at way beyond anything I had ever done. The Weaver rep was super surprised since you could hear my partners lungs heave from well over a 100+ yards away ...'cause he was a 4 pack a day smoker!
