Rooting around in the freezer, and found some prime rib racks that I had saved, after cutting rib eye steaks off of them. Perfect for the girls and I tonight. Corn on the cob and beans w/ bacon. Grilled some fruit.

30 plus years ago I was able to buy all of the ribs off a whole ribeye for 99 cents a lb. all day long. Managing a meat market has its perks. LOL. I was a young pup who had never smoked any and asked a friend of mine how to smoke them. He said he boiled them for about 30 minutes prior to throwing on the smoker. I said WTF and he said just try it. Well, I did, and they turned out great. I finally mastered smoking them without the boiling step, but if that`s what it takes to get them tender...... Do it. Getting them tender is more important than how you got them that way.

That's why I love the Insta-Pot. Does a great job on even the toughest meat, and comes out tender and fall off the bone. These ribs were in 45 minutes, then went onto the gas grill for 2 minutes a side. Came out perfect!
