Talk to your insurance agent and make sure you're adequately covered, liability-wise. Charging for hunts changes the whole picture dramatically. You will also need the Permit from TPWD to charge for hunting.... the fine for not having it is steep

Got all that covered guys, been selling all kinds of hunts for 25 years, just not management buck hunts.

Best wishes Stompy. My days around Albany are probably done. After 28 years, my lease is going up for sale. Maybe my wall was getting too full. I'm going to miss that country!

I like the idea of half the cost up-front (whatever you decide it to be) for the booking/lodging/guiding and hunt - and the other half for the harvest.
I would suggest a pre-determined, total cost (no sliding cost depending on score) - just so a hunter knows what their all-in cost will be. To me, someone who scoffs at $2000 for a weekend hunt for the deer you photoed is just not a serious person...especially considering about half of that cost is for lodging and for you having to keep them company!
The question for me would be do you want the hunter to "sight in" their rifle upon arrival...to make sure they can reliably hit the target at hunting distances. After two "mishaps" I instituted this requirement for my guests - they have to arrive with a 3-shot target, then they have to do one for me!
The first time it happened at my place, my guest showed up with his rifle. I asked if he had sighted it in before coming and he said no. I politely asked him to hunt with one of my rifles, which I think kind off insulated him, but oh well. After this precaution he proceeded to wound a deer then proclaimed that my rifle must be off. So, to remove this variable, we sat a can of Le Sueur peas on a rock at precisely 178 yards and I blasted it to smithereens...I then politely suggested never blaming the gun. I found the deer two days later gut shot.
